It’s an online, self-paced health coach certification program that I found to be the most bang for my buck and aligned with what I believed in + what I knew would help my clients heal. Before committing to it, I talked with graduates of PHCI as well as graduates from other programs. After doing my research, PHCI felt the most aligned with what I was looking for, and I am so glad I trusted my gut when it came to the program that I felt would work best for ME (because clearly it has!).  Overall, I thoroughly enjoyed my learning experience and would highly recommend it to anyone considering the health coaching route. One of the main reasons was due to their ability to filter out pollutants floating around the house (indoor air = not very clean on it’s own!). I feel SO much better knowing the air that we are breathing in, eating in, sleeping in, etc., is as clean as possible. The air purifiers remove pollutants such as dust, mold, pet dander (with two big dogs, this is huge), viruses, smoke (again, huge for living in CA), and more, which otherwise would end up hanging out in our lungs.</image:title>

      <image:caption>stovetop method: Cook chicken as desired (I like to bake mine at 350 for 20-30 minutes!) In a large pan, pour in your broth, salsa, and sweet potatoes, carrots, celery, lime juice, and salt. (If you’re using butternut squash instead of sweet potatoes, you’ll add this in later!) Bring to a boil. Once boiling, add in your butternut squash and simmer for 30 minutes. (the squash takes less time to cook than the rest!) After 30 minutes, check to see if vegetables are soft/textured to your liking. Feel free to simmer for longer, if desired! Optional Step: Once done, ladle out about 1/3 of the carrots/sweet potato/butternut squash to blend into purée. (I just throw in the kitchen aid quickly, or mash w/ a potato masher, or in the blender) Add puree back into soup. Add in your cooked chicken. Add in your spinach and mix to let it wilt.
