Creamy Mashed Parsnips

CREAMY MASHED PARSNIPS

Mashed parsnips are a PERFECT and delicious mashed potato alternative for anyone who can’t tolerate nightshades!! I can now, but at times I wasn’t able to!

I have made it my mission to make and enjoy and share all the delicious foods for a variety of “healing protocols” because so many of us dealing with chronic GI issues or autoimmune disease need to temporarily (or permanently for some) avoid certain food groups. These are great alternative for anyone who can’t tolerate nightshades!

Ingredient list

  • 1 pound parsnips peeled and sliced

  • 1/2 cup coconut milk or original nutpods

  • 3 tablespoon ghee

  • 1/2 teaspoon salt

  • 1/2 teaspoon black pepper

Steps

Step 1

Peel parsnips and place them in a sauce pan full of water and bring to a boil. Cook until tender with a fork and then strain (about 15-20 minutes!)

Step 2

Add strained parsnips to food processor or blender and add remaining ingredients. Blend until creamy and smooth! Add more seasoning and/or liquid as desired.

Step 3

Top with more salt and pepper, butter, chives, etc. ENJOY! :)
