Gooey Pumpkin Cookie Bars

GOOEY PUMPKIN COOKIE BARS

I am not kidding when I say that you NEED these! They may just be one of my most favorite desserts that I have ever made — and I’ve made quite a few!

This recipe targets:

Vegan | Keto | Dairy-Free | Grain-free | Paleo

These are made with ingredients that will leave you feeling GOOD, satiated, and satisfied after them! <3 Made vegan, so they make room for everyone at the dessert table!

Ingredient list

  • 3/4 cup almond butter

  • 1/2 cup coconut sugar (Or Whole Earth Sweetener’s allulose blend for sugar-free!)

  • 3/4 cup pumpkin puree

  • 2 tablespoon maple syrup (or lakanto monkfruit maple for sugar-free!)

  • 2 flax eggs

  • 1/2 cup almond flour

  • 3 tablespoon coconut flour

  • 1/2 teaspoon baking soda

  • 2 teaspoon pumpkin pie spice

  • 1/2 teaspoon salt

  • 2 handfuls chocolate chips

Steps

Step 1

Prepare flax eggs and set aside to gel. Preheat oven to 350 degrees. Whisk together wet ingredients, then add in dry ingredients.

Step 2

Stir ingredients together to form a thick batter. Transfer to 8x8 dish (greased or lined with parchment paper). Chop/press chocolate chips into the pumpkin dough.

Step 3

Bake for 22-25 minutes at 350 degrees. Cool for at least 30 minutes before slicing. DEVOUR!! <3
