No Bake Chocolate Dipped Pecan Pie Cookies

NO BAKE CHOCOLATE DIPPED PECAN PIE COOKIES

These have the DELICIOUS flavor of a chocolate pecan pie, but with the ease of baking cookies! These will quickly become a house favorite during the holiday season — or all year long!

Ingredient list

  • 1 cup pitted medjool dates

  • 1 cup pecans (raw)

  • 1 cup unsweetened shredded coconut

  • 1 teaspoon vanilla extract

  • 1/2 teaspoon sea salt

  • 2 tablespoon protein infused maple almond butter

Steps

Step 1

Combine all ingredients in a food processor until it becomes dough-like, but not perfectly smooth. You can use a blender and/or vitamix, but you have to scrape down the edges quite a bit!

Step 2

Roll dough into formed balls and then flatten into a cookie shape. Place cookies onto parchment paper on a cookie sheet, and freeze for 20+ minutes.

Step 3

Melt chocolate chips and drizzle over no-bake cookies straight out of the freezer. Place back on parchment paper/tray to harden.

Step 4

Press a raw pecan on top of the melted chocolate quickly before it hardens!
