RAINBOW CARROT FRIES

I think I like these better than I like Japanese sweet potato fries, which is saying A LOT. These are SO good and so easy, too! Not to mention healthy and pretty!

If you’ve never had these organic rainbow carrots from Trader Joe’s, I HIGHLY recommend trying them! They taste so much more flavorful than regular carrots, I don’t think you’ll be disappointed. Carrots are also extremely high in fiber, and this fiber helps to eliminate excess estrogen — we can all appreciate a hormone balance helper!

Ingredient list

  • 1 large bag of organic rainbow carrots (I get mine from Trader Joe’s!)

  • 2 tablespoons of avocado oil

  • 1/4-1/2 teaspoon of sea salt

  • Optional: Garlic powder

Steps

Step 1

You’ll want to start out by pre-heating your air fryer to 400 degrees for about 5-10 minutes!

Step 2

Cut your carrots into sticks. You could peel them if you want, but I don’t think it’s necessary! You can really cut them as thick or as thin as you like — think about how you like your regular potato fries! However, you’ll want to stick to the thinner side for this recipe, with the heat and length of time we’ll be cooking them for!

Step 3

Once you’ve cut them, toss the carrots with the avocado oil, sea salt, and any other optional seasonings you may like! I like to do this in a separate bowl, so that the carrots get coated evenly.

Step 4

Add your carrots into the air fryer basket. You’ll want to cook them for about 15 minutes at the 400 degrees! After those 15 minutes, remove the air fryer basket and toss/shake them. Then continue to air fry them for another 8-10 minutes until they are tender! If you want them to be more firm, feel free to take them out earlier. On the other hand, if you want them more tender, add more time!

Step 5

Once your carrots are done, remove them from the air fryer, and toss them in more yummy seasonings if you desire! Serve them immediately. I LOVE to pair them with the Chipotle Lime Mayo from Primal Kitchen. It’s the best combination in the land!
