Tahini Chocolate Chip Cookies

TAHINI CHOCOLATE CHIP COOKIES

I’m not kidding, this is the perfect healthier version of the one and only chocolate chip cookie!! Low in sugar, paleo, and easily made vegan/keto, too!

This recipe targets:

I used GoodSam chocolate chips for this recipe, which helps me make my baking recipes fun, easy, and sugar-free! A win-win situation for everyone. :)

Ingredient list (MAKES 12 COOKIES)

  • 1 egg (or flax egg for vegan)

  • 1/2 cup coconut sugar (or monkfruit for 10/10 blood-sugar balance!)

  • 1/2 cup tahini

  • 2 tablespoons melted ghee (works the best) or coconut oil

  • 1 teaspoon vanilla extract

  • 1/2 cup almond flour

  • 1/4 cup coconut flour

  • 1/4 teaspoon baking soda

  • 1/8 teaspoon salt

  • 1/2 cup allulose sweetened dark chocolate chips (I use GoodSam foods!)

  • Maldon salt (for sprinkling on top of the baked cookies!)

Steps

Step 1

Preheat your oven to 350 degrees, and line a baking sheet. Then, mix together the wet ingredients and dry ingredients separately from one another. Combine the two and mix until well incorporated.

Step 2

Fold in your chocolate chips, and use a small cookie scoop to roll ~12 cookies into balls. Flatten them with your palm to form a cookie shape.

Step 3

Bake for 8-11 minutes, or until they are slightly golden (they are super yummy if you underbake them slightly!)

Step 4

Sprinkle them with the maldon salt immediately, and LEAVE them on the cookie sheet for 5-10 minutes, or until completely cooled. ENJOY! :)
