Chocolate Covered Banana Bread Bites

CHOCOLATE COVERED BANANA BREAD BITES

Just when you thought these couldn’t get any better, they are NO-BAKE! Super quick and easy. They are very customizable too for optimal deliciousness!

This recipe targets:

Added Sugar-Free | Dairy-Free | Grain-Free | Vegan

What I love most about these is that they have NO added sugar! Sweetened by nature’s sugar — bananas. Not only makes them easy and delicious, but better for the blood-sugar too!

Ingredient list

  • 1 medium mashed ripe banana

  • 1 tablespoon sunflower butter (or any nut/seed butter)

  • 2 tablespoons coconut flour

  • 1 tablespoon non-dairy milk

  • 2 tablespoons coconut butter

  • Sprinkle of cinnamon

  • Splash of vanilla extract

  • 1 scoop vanilla collagen (I use the brand Ancient Nutrition’s vanilla collagen!)

  • Optional: Handful of chopped walnuts

  • Optional: 1 tablespoon granulated sweetener (if you want them sweeter! be sure to test the batter)

CHOCOLATE COATING

  • 1/4 cup dairy-free and/or sugar-free chocolate chips

  • Small spoonful of coconut oil

Dietary benefits

  • Gluten-free

  • Dairy-free

  • Paleo

  • Refined Sugar-free

  • Vegan

  • Grain-free

  • Nut-free friendly

Steps

Step 1

Mix all banana bread bite ingredients together until they are well incorporated. Roll them into about 8 balls, and freeze them for 20-40 minutes on parchment paper.

Step 2

Time to prep the chocolate coating! Melt and mix your chocolate chips and coconut oil.

Once your banana bread bites are semi-frozen, drizzle the chocolate over them. Since the chocolate is mixed with coconut oil, it will harden pretty quickly! You can eat them right away, or freeze/refrigerate them for later. If you want them less hard, they can go in the fridge! I prefer mine more on the medium/soft side.

Enjoy!
