Hearts of Palm Spaghetti

HEARTS OF PALM SPAGHETTI

Paired with a creamy vodka sauce and organic grass-fed ground beef, this hearts of palm spaghetti is a dreamy dinner! It is paleo, keto, vegetarian and vegan friendly, meaning it makes room for everyone at the table!

Although I am not always prepared with food prep for the week, when I have the time/food/energy to do so, this is one of my GO-TO’s! It’s easy, delicious, and takes about 10 minutes.

Ingredient list

  • 1 serving palm noodles (I get mine from Trader Joe’s!)

  • 1 serving organic grass-fed ground beef

  • 1 tbsp avocado oil

  • Sea salt

  • 1 serving mozzarella cheese (trader joe’s cashew mozzarella is my favorite for dairy-free!)

  • Optional: 1 serving of spinach

Steps

Step 1

In a cast iron skillet, saute on medium heat, organic grass-fed ground beef w/avocado oil and sea salt (we always have the grass-fed ground beed on hand in the fridge or freezer!).

Step 2

In another skillet, add your hearts of palm noodles from Trader Joe’s (SO good and SO easy! I highly recommend). Saute on high heat for ~1-2 minutes (optional: add some spinach).

Step 3

Add some grass-fed ground beef to the hearts of palm noodles and then pour in Primal Kitchen Foods vodka.

Step 4

Sprinkle some salt/pepper and trader joes cashew mozarella and you have yourself a delicious balanced dinner in less than 10 minutes!

NOTEs

  • The hearts of palm noodles at TJ’s are in a box in the soup aisle (towards the bottom). I usually stock up so that I have lots in the pantry. I also stock up on PK vodka sauce, it’s my favorite.

  • Sometimes I use miracle noodles from thrive market if I don’t have the hearts of palm

  • Sometimes I add spinach or Broccoli, sometimes I don’t!

  • You can use another red sauce, I just have an obsession w/ the PK vodka sauce

  • I garnish everything with microgreens b/c they’re PACKED with nutrients!

  • You can swap ground beef for turkey/chicken/lamb, or sausage or lots of other options!
