Healthy Jam Thumbprint Cookies

HEALTHY JAM THUMBPRINT COOKIES

You DEFINITELY want to make these this weekend — you can thank me later! These are my favorite! They are paleo, vegan and keto friendly, AKA a delicious yet healthy treat that everyone can enjoy <3

This recipe targets:

Paleo | Vegan | Keto | Low in Refined Sugar

These are made with simple anti-inflammatory ingredients and are also VERY low in unrefined sugar! Not to mention they are delicious and will definitely make your day.

Ingredient list

For the Dough

  • 2 cups almond flour

  • 1/4 teaspoon sea salt

  • 1/4 teaspoon baking soda

  • 4-6 tablespoon raw honey (you can also use maple syrup for vegan!)

  • 1.5 tablespoon unsweetened non-dairy milk (use code MADD.HEALTHY if you want to use my fave Nutpods brand!)

  • 1/4 cup olive oil (works the best), or avocado oil/coconut oil works too!

  • 1 teaspoon vanilla extract

  • Optional: a pinch of 100% pure monk-fruit! (I add this so I can use less sugar overall, but you can do up to 6 tbsp honey/maple syrup and leave this out if you don’t have it)

For the JAM

  • 1 cup berries (any kind, I used frozen blueberries for mine!)

  • 1 tablespoon chia seeds

  • 1 tablespoon raw honey (or maple syrup!)

Steps

Step 1

Mix wet ingredients together and dry ingredients together separately, and then combine and mix until well incorporated! Chill the dough in the fridge for at least 10 minutes.

Step 2

While the dough is chilling, it’s the perfect time to make the jam! Heat and mix all the ingredients in a pan on low/medium heat. Let the heated and well-mixed berries/honey/chia seed combo sit to become gel-like while you bake the cookies. Mix it occasionally while the cookies are baking — it should become a thick/jam/gel like texture as the chia seeds soak in!

Step 3

After the dough has set in the fridge, roll it into 10-12 balls. Gently press thumb in the middle and bake them at 350 degrees for about 10 minutes, or until the cookies are golden on the bottom.

Step 4

Let the cookies cool and then add the chia jam. ENJOY! :)
