PALEO Blackberry Cobbler

grain free, dairy free & REFINED SUGAR FREE

gooey filling and crisp topping

You’re going to be making this dessert multiple times a week (seriously I made it 3 times in one week). It’s the quickest recipe and pairs so well with a yummy DF coconut cream vanilla ice cream. You can use fresh & frozen blackberries or even swap for marionberries (or any berry that sounds good to you!)

This cobbler is a super simple and much healthier version of your favorite summer dessert. Enjoy with your favorite ice cream (mine is the Cosmic Bliss Madagascan Vanilla Bean DF version!)

Ingredient list

Blackberry Filling:

  • 6 cups fresh blackberries

  • 2 Tbsp tapioca flour

  • 3-6 Tbsp pure maple syrup (to taste/sweetness liking)

  • 4 Tbsp lemon juice

  • 4 Tbsp water

  • 2 tsp pure vanilla extract

Grain-Free Cobbler Topping:

  • 2 cups Super Fine Almond Flour

  • 6 Tbsp coconut oil melted

  • 6 Tbsp pure maple syrup

  • 1 tsp ground cinnamon

  • 1/2 tsp sea salt

Steps

  • Mix filling and pour in casserole dish (I used 9in x 13in)

  • Mix topping in same bowl and spread over filling

  • Bake at 375 for 30-40 min or until slightly browned on the crust

  • Pair w/ your favorite ice cream (I used the Dairy Free Cosmic Bliss Madagascan Vanilla Bean)

  • Enjoy!!! It’s seriously THAT easy!
